I used to tout the benefits of the plethora of nutrients contained in this bright red smoothie, ad nauseam until my listener’s eyes glazed over, but honestly, the bottom line is that it’s got a ton of good-for-you stuff in it, it tastes good, and it’s red! What more could you want for Valentine’s Day breakfast???
1 apple, washed and cut into chunks
1 small red beet, raw, peeled and cut into chunks
1 whole lime, peeled (or the juice of one lime)
a handful of frozen strawberries (6-ish), or the equivalent of frozen blueberries or raspberries
6 ice cubes
1/3 cup cold water (more or less, depending on desired consistency)
Put all ingredients into blender and puree until smooth. Makes one large or two small servings.
BEWARE: your urine will most likely be pink in the hours following the consumption of smoothie - again, perfect for Valentines Day!
